Purple Sprouting Broccoli with a smoky almond sauce
While spring is playing hide and seek, the soil is slowly warming up. One of the many treats of spring must be Purple Sprouting Broccoli or PSB. Their tender stems and nutty flavour is a must for any food aficionado! In this recipe, we briefly boiled and pan fried them, and paired with a smoky almond sauce. You can have this as a starter or side, or just make a bigger portion and have it as a main!

Ingredients
- 250 grams purple sprouting broccoli fresh
- 4 tbsp olive oil
- 1 tbsp lemon zest optional
- 1 tbsp almond flakes, toasted optional
- 1/2 tsp chilli flakes optional
- 1 handful almonds toasted, keep some for topping
- 1 tsp tomato paste
- 2 whole garlic cloves peeled
- 1 tsp smoked paprika
- salt and pepper to taste
Instructions
- Clean your purple sprouting broccoli and try to cut them all to the same length.
Bring a pan of water to the boil with a generous amount of salt.
Add your purple sprouting broccoli and keep for 1-2 minutes.
Drain the hot water, put the purple sprouting broccoli in a colander and blanch them under cold running water for two minutes. This will help keep the broccoli's colour and bite.
Let it drain and set aside for now.
- Put all the ingredients for the sauce in a blender, and blitz until you get a smooth texture.
Warm up the olive oil on medium heat in a sauté pan. Once hot, add the broccoli and season with salt and pepper.
Sauté the broccoli on both sides, until you get some crispy edges.
- To serve, pour your sauce in the middle of one big plate and use the bottom of a spoon to spread it across to form a big circle.
Place your broccoli over the sauce and sprinkle with some lemon zest, chilli flakes and toasted almonds. Voilà, c'est ça!
