Rhubarb Energy Balls
This week we’re making Rhubarb energy balls that can be your healthy snack on the go, or for when you’re having a Netflix and Chill day. These balls are packed with nuts and seeds, which are a good source of protein, healthy fats, fibres, vitamins and minerals. We’re using almonds that contain Zinc and Hemp seeds that are high in omega-3 and omega-6 essential fatty acids. This will give our skin a beautiful spring glow!
Of course we need to add rhubarb to this party mix. Use the Rhubarb Compote we made recently. This spring crop (the first fruit of the season, so they say) will add a kick of fresh sourness and is rich in antioxidants.

Rhubarb Energy Balls Recipe

You can swap the nuts and seeds in this recipe for the ones you have in your cupboards. Just make sure to follow the weight and ratio of wet and dry ingredients. The same goes for the toppings. We’ve chosen toppings that compliment the rhubarb’s unique flavour, but you can use whatever toppings you have at hand. Have a play around with them and enjoy!
Ingredients
- 5 talespoons Rhubarb Compote see recipe on our website
- 5 pitted dates diced
- 80 grams almonds
- 30 grams coconut flakes
- 60 grams Hemp seeds
- 1 pinch Cardamom seeds craushed. Optional
- zest of one organce for the Topping
- 50 grams Pistachio crushed, for the Topping
- 5 grams Rose petals for the Topping
Instructions
- For this recipe you will need a food processor or you could also use a mortar and pestle. Add the hemp seeds, almonds, coconut flakes and optionally a pinch of ground cardamom seeds into the food processor. Blitz them until you achieve your desired texture. If you prefer some texture in the energy balls, make sure to stop on time so you have a good balance between chunky bits and fine powder.

- Now, add in the dates and rhubarb jam, and blitz until you get a uniform paste.
- Use a tablespoon to scoop out some of the paste, place it in your hands and start rolling until a ball forms. When all your balls are rolled, take a shallow plate and combine the orange zest, rose petals and pistachio nuts.

- You can now roll your energy balls in the toppings plate and they will transform into fragrant and colourful jewels.

- To let them set and harden up, let them rest in the refrigerator for a minimum of 30 min up to an overnight beauty sleep. Bon appétit!
