Potatoes prove sustainable carbohydrate source
New research shows potatoes are the most sustainable source of carbohydrate, it is claimed. The research commissioned by the Potato Council was carried out by Cranfield University. The study compared the total greenhouse gas emissions (GHGE) and water usage for rival carbohydrates Italian pasta and basmati rice alongside potatoes. The study found potatoes and pasta had lower GHGE and water impacts than basmati rice on a fresh and dry weight basis.
